Tzatziki Chicken Salad Recipe
Ingredients
For the Chicken:
– 2 large boneless, skinless chicken breasts (or about 1 lb/450 g)
– 1 tablespoon olive oil
– 1 teaspoon dried oregano
– 1 teaspoon garlic powder
– Salt and black pepper, to taste
For the Tzatziki Sauce:
– 1 cup (240 g) Greek yogurt (full-fat or 2%)
– 1/2 cucumber, grated and squeezed to remove excess moisture
– 2 cloves garlic, minced
– 1 tablespoon fresh lemon juice
– 1 tablespoon olive oil
– 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
– Salt and black pepper, to taste
For the Salad:
– 2 cups (about 100 g) mixed salad greens or lettuce
– 1 cup cherry or grape tomatoes, halved
– 1/2 red onion, thinly sliced
– 1/2 bell pepper, thinly sliced
– 1/4 cup Kalamata olives, sliced (optional)
– 1/4 cup feta cheese, crumbled (optional)
