4-5 medium potatoes
1 large carrot (or 2 smaller ones)
200-300 g broccoli florets
1-2 onions
2 tbsp cornstarch
Salt and black pepper, to taste
1 tbsp dried herb mixture (rosemary, oregano, thyme, basil)
1 tbsp garlic powder
1 bunch of fresh parsley, chopped (for serving)
Vegetable oil for frying (approximately 4 tbsp)
Steps to Make Vegetable Fritters with Broccoli, Potatoes, and Carrots:
Step 1: Prepare the Vegetables
Peel and Grate the Potatoes and Carrots: Start by peeling the potatoes and carrots. Using a box grater or a food processor, grate the potatoes and carrots into fine shreds. Place the grated vegetables in a clean kitchen towel or cheesecloth and squeeze out any excess moisture. This step is important to help the fritters crisp up when frying.
Chop the Broccoli: Cut the broccoli into small florets and either finely chop them by hand or pulse them in a food processor until they are small enough to mix into the fritter batter.
