Zesty Lemon Sweet Rolls with Cream Cheese Icing
Ingredients:
4 1/2 cups all-purpose flour, plus more for dusting
1/3 cup granulated sugar
2 1/4 teaspoons instant yeast (1 package)
1/2 cup whole milk, warm
1/2 cup unsalted butter, melted
Instructions:
Prepare the Dough:
In a large mixing bowl, combine the warm milk and melted butter. Stir in the granulated sugar and instant yeast. Let it sit for about 5 minutes until it becomes frothy.
Mix the Dry Ingredients:
In another bowl, whisk together the flour and a pinch of salt. Gradually add the flour mixture to the yeast mixture, stirring until a dough forms.
Knead the Dough:
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
Roll and Fill:
Once risen, punch down the dough and roll it out into a rectangle (about 1/4-inch thick). Spread softened butter over the dough and sprinkle with sugar and lemon zest.
Shape the Rolls:
Starting from one edge, roll the dough tightly into a log. Cut into 12 equal pieces and place them in a greased baking dish. Cover and let rise for another 30 minutes.
Bake:
Preheat the oven to 350Β°F (175Β°C). Bake the rolls for 20-25 minutes, or until golden brown.
Prepare the Cream Cheese Icing:
While the rolls bake, beat together 8 oz cream cheese, 1/4 cup butter, 2 cups powdered sugar, and 1-2 tablespoons lemon juice until smooth.
Finish:
