Mexican Lentejas (Lentil Soup)
Ingredients:
1 ½ cups dried lentils, rinsed
1 small onion, chopped
2 garlic cloves, minced
2 carrots, sliced
2 medium potatoes, peeled and diced
2 Roma tomatoes, chopped
1 celery stalk, sliced (optional)
1 jalapeño or serrano pepper, diced (optional for heat)
6 cups chicken or vegetable broth
1 tsp cumin
1 tsp dried oregano
1 bay leaf
1 tbsp vegetable oil
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Optional: Mexican chorizo or bacon (for a heartier soup)
