Shredded Beef Enchiladas
Ingredients:
2 cups cooked, shredded beef (like pot roast or brisket)
2 cups red enchilada sauce (store-bought or homemade)
12 corn or flour tortillas
1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
1/2 onion, finely chopped
2 garlic cloves, minced
1 tsp cumin
1 tsp chili powder
1 tbsp vegetable oil
Salt and pepper to taste
Fresh cilantro, sour cream, and avocado for garnish (optional)
