Ingredients:

  • 4 chicken breasts that have been boneless and skinless
  • Toss with salt and pepper for flavor.
  • 1-tsp. olive oil
  • 2 cups cut-in-half grape tomatoes
  • 3 minced garlic cloves
  • balsamic vinegar, 1/4 cup
  • 1.5 milliliters of dried oregano
  • dried basil, 1 teaspoon
  • One cup of mozzarella cheese, shredded
  • 1/2 cup chopped fresh basil
  • Additional leaves of basil for finishing
