Ingredients:
– 2-3 apples, peeled, cored and sliced
– 1/2 cup raisins
– 2 cups all-purpose flour
– 1 cup sugar
– 1/2 cup softened butter
– 3 eggs
– 1 cup milk
– 2 teaspoons baking powder
– 1 teaspoon vanilla extract
– Pinch of salt
– Optional: Pinch of cinnamon or nutmeg for taste
Instructions:
1. **Preheat the oven**: Preheat your oven to 350°F (175°C). Thoroughly butter a pie dish.
2. **Prepare the apples and raisins**: Peel, core and slice the apples. Sprinkle the apple slices and raisins evenly into the greased pan.
3. **Make the dough**:
– In a large bowl, cream together the butter and sugar until light and fluffy.
– Add the eggs one at a time, beating well after each addition.
– Stir in the vanilla extract.
– In a separate bowl, mix together the flour, baking powder, and salt.
– Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture.
– Mix until well combined.
4. **Assemble**: Pour the batter over the apples and raisins in the pan. Use a spatula to spread the batter evenly over the fruit.
5. **Baking**: Bake in the preheated oven for 45 to 55 minutes, or until a toothpick inserted in the center of the cake comes out clean.
6. **Cool and Serve**: Let the cake cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely. Once cooled, slice and serve.
Advice:
– You can sprinkle some cinnamon or nutmeg on the apples and raisins to enhance their flavor even more.
– Serving with a dusting of powdered sugar or a simple glaze would add a nice touch.
