Ingredients:
For the Chicken:
- 6 boneless, skinless chicken thighs
- 6 slices bacon
- Salt and pepper, to taste
- 1 tablespoon olive oil
For the Glaze:
- 1/4 cup honey
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
Directions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
- Season the chicken thighs with salt and pepper to taste.
- In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and drain on paper towels. Reserve the bacon fat in the skillet.
- In the same skillet with the bacon fat, heat the olive oil over medium-high heat. Add the seasoned chicken thighs to the skillet and cook for 3-4 minutes on each side, or until golden brown. Remove the chicken from the skillet and transfer to the prepared baking sheet.
- In a small bowl, whisk together the honey, brown sugar, soy sauce, Dijon mustard, garlic powder, smoked paprika, and black pepper to make the glaze.
- Brush the glaze over the chicken thighs, coating them evenly.
- Wrap each chicken thigh with a slice of cooked bacon, securing with toothpicks if needed.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the bacon is crispy.
- Remove from the oven and let the chicken rest for a few minutes before serving.
