Ingredients:
- 4 bone-in, skin-on chicken thighs
- 4 bone-in, skin-on chicken drumsticks
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon sesame oil
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Sesame seeds and chopped green onions for garnish
Instructions:
Preparing the Marinade
- In a large mixing bowl, combine the pineapple juice, soy sauce, ketchup, brown sugar, honey, minced garlic, grated ginger, sesame oil, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix well until the sugar is dissolved and the ingredients are thoroughly combined.
Marinating the Chicken
- Place the chicken thighs and drumsticks in a resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken, ensuring that each piece is evenly coated.
- Seal the bag or cover the dish with plastic wrap, then refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the chicken to absorb the marinade.
